Here is my favorite recipe for
Chicken/Pork Adobo
Ingredients:
- 1 lb of pork ,cut in cubes, and 1 lb of pieces of chicken
- 2 heads garlic, minced

1/2 cup soy sauce

1 cup palm vinegar

2 cups of water
-
2 laurel leaves (bay leaves)

4 Tbs olive oil

Salt and black ground pepper ( crushed peppercorns if desired ) to taste
Cooking Instructions:

heat 2 Tbs of olive oil in a big sauce pan or wok in medium heat

sauté the minced garlic until golden brown

Add the pork and chicken to the pan

Add 2 cups of water, 1/4 cup of soy sauce, ground pepper and the bay leaves.

Bring to a boil. Cover and simmer for 30 minutes or when meat is tender. Add little water as needed

Remove the pork and chicken from the sauce pan and on another pan, heat remaining olive oil and brown the pork and chicken for a 5 minutes.

Then mix the browned pork and chicken back to the sauce

Add salt and/or pepper if desired

Bring to a boil then simmer for an additional 5 minutes.

Serve hot with the adobo gravy over plain rice.
