Here is my favorite recipe  for

Chicken/Pork Adobo

Ingredients:

  • 1 lb   of pork ,cut in cubes,  and  1 lb of  pieces of chicken
  • 2 heads  garlic, minced
  • 1/2 cup soy sauce

  • 1 cup  palm vinegar

  • 2 cups of water

  • 2 laurel leaves (bay leaves)

  • 4 Tbs  olive oil

  • Salt  and  black ground pepper  ( crushed peppercorns if desired ) to taste

Cooking Instructions:

  • heat 2 Tbs of  olive oil in a big sauce pan or wok  in medium heat

  • sauté  the minced garlic  until golden brown

  • Add the pork and chicken to the pan

  • Add 2 cups of water, 1/4 cup of soy sauce, ground pepper and the bay leaves.

  • Bring to a boil. Cover and simmer for 30 minutes or when meat is tender. Add  little water as needed

  • Remove the pork and chicken from the sauce pan and on another pan, heat  remaining olive oil and brown the pork and chicken for a 5  minutes.

  • Then mix the browned pork and chicken back to the sauce

  • Add salt and/or pepper if desired

  • Bring to a boil then simmer for an additional 5 minutes.

  • Serve hot with the adobo gravy  over  plain rice.
